An employee of the Times- composing room since 1971, her ideas are as modern as the equipment she uses daily. Yet her philosophy about marriage, the importance of a stable home environment in rearing children, and of keeping lines of communication open between husband and wife are as valid today as they were 50 years ago. Bettye has been married to Roland Ellison, Production Superintendent of the TimesJournal, for 31 years. When asked if she finds working under her husband's supervision difficult, she answered, "'A friend warned me that it wouldn't work, but Roland is just the same at work as he is at home kind, helpful, always eventempered.

There just hasn't been any problem." The Ellisons are the parents of three children, Mike Ellison, Butch Thompson and Connie Ruff, and the grandparents of five grandchildren. When her family was growing and when they all came' home for special occasions, Bettye did lots of cooking. "I love to cook. When the children were growing up, they never knew what they were going to eat because I like to "I particularly like to use herbs and spices in seasoning, but you have to be careful, and it takes time." Bettye continued, "Now that the children are grown 'and have homes of their own, my cooking is simpler. Working has made a difference, too.

MAKING YOUR OWN Until the dawn of machinery and plastics, most of the decorations used for the, Christmas season were made from plant materialboth fresh and dried. If you would like to return to nature this Christmas, try making your own decorations.

You can find most of the plant material you need in your own back yard or in the woods. Look for pine cones, acorn nuts and their cups, seed capsules and, come December, anything that's green. You can turn these treasures into wreaths, miniature Christmas trees, centerpieces and other decorations. Put any dry material into a slow oven--about 160 degrees for about an hour. This should kill any insects or other animal life hiding in it.

BATES Extension Home Agent Make a daisy Dallas County 4-H'ers should enjoy making a bouquet of daisies for the holiday season. They can be used for table decorations at a banquet, or in a vase, for floral pick-me-up! To make the daisies you will need: foam ball, knife, pepe cleaner, fabric and glue. Makes 25 squares. CHOCOLATE FROSTING cups sugar 4 T. cocoa 4.T. butter 7 T. milk 2 T.

Bake 2 layers and let cool while making frosting. I take a knife and poke 1 layer and pour over frosting. Put the other layer on top and do the same. This doesn't make such a pretty cake but the frosting runs down into the holes and it sure does make it taste good. CINNAMON ROLLS Heat oven to 450 2 cups biscuit mix 2-3rds cup milk cup soft butter or margarine 3-5 T.

sugar 2-3 tsp. cinnamon Blend biscuit mix and milk. Turn onto surgace dusted with mix and knead about 20 times. Roll in rectangle and spread with soft butter. Mix sugar and cinnamon and sprinkle over dough.

LEMON SOUR CREAM PIE 1-34 cups sugar dash salt 3 eggs, 1 tsp. grated lemon peel 1 cup sour cream 3 T. cornstarch 1 cup milk 4 cup butter or margarine 1,4 cup lemon juice 1 baked pie shell Combine 1 cup sugar, cornstarch, salt in saucepan; stir in milk slowly. Cook until thick. Blend small amount of mix into egg yolks, then stir back in hot mix.

Cook and stir 2 minutes. Add butter, peel and juice. Cover and cool. Fold in sour cream and pour into pastry shell. Cover with meringue and bake at 350 degrees until brown.

HAMBURGER SOUFFLE PIE 1 lb. ground chuck tsp. salt tsp. pepper med. small onion, minced tsp.

oregano tsp. thyme tsp. parsley 2 eggs, separated 1 unbaked pie crust In skillet cook meat and seasonings til red is gone. Beat egg yolks slightly. Drain meat and add eggs, stirring until well mixed.

Pour in pie shell and bake in 350 oven while making souffle. SOUFFLE Beat egg whites with tsp. cream of tartar until stiff. Add cup grated cheddar cheese. Fold cheese into egg whites.

Pour on top of meat mixture. Return to oven and bake 25-30 minutes or until done. This makes a big pie so use a large pie crust. HAM GLAZE 1-18 oz. jar apricot jam 2 tsp.
